These were basically the first words that came out of my mouth when the Lady of the Manor said she purchased this contraption during the Amazon Prime Day a few years back. I had absolutely no idea what this thing was. I only knew what I was told….it’s like a pressure cooker, but more. I was unaware of how much this little device would change how our family ate moving forward.
Mind you, I’m really not a bad cook at all. In fact, I’d even go as far as to say I’m a pretty damn good cook….when I want to be. That’s the rub. I enjoying cooking, but I’m not a big fan of all the prep and, some times, how long it actually takes to prep and put everything together. In comes the Instant Pot. We don’t have a name for her yet, but I’m sure we can come up with one. My boys named my car “Betty White” and mom’s car “Betty Blue”, so I bet they could come up with an easy name to remember.
Anyway, the “boss”, as my 4yo calls her, started putting together a weekly meal calendar for several reasons…1. To save money (no more eating out or ordering in as much) and 2. To eat healthier. Like I mentioned earlier, I really do like to cook and I’m pretty good at it, but I’m not a fan of the prep and time that can go into making a dish. Especially when you have growing boys who can be pretty finicky. As took a look on the meal calendar, I noticed a few things that we haven’t made before, but sounded really good. I can’t remember exactly what was on the calendar (it’s been a few years), but I can tell you that some of the things we made since the beginning are some of my all-time favorite meals.
One of the amazing things about the Instant Pot, is that you can cook meats/veggies that are still frozen!A few nights ago, I randomly decided to do a Facebook Live showing everyone my very first time at cooking with our Instant Pot. Yes…it’s been a few years since we first bought the thing, but I’ve always been freaked out by the fact that it’s actually a pressure cooker and the steam that comes out, comes out pretty damn fast/hot! I don’t want anything to explode or burn myself with that steam. I made some Shoyu Chicken which is one of my favorite dishes that we make with our Instant Pot. Sooooo goood!!!
All that being said, we’ve only scratched the surface of what that magic contraption can really do. It can make yogurt, cheesecake, all kinds of desserts! I’ll be sure to make my list of new dishes to try and let you all know about it!
